Indonesian Soy Sauce

Indonesian Soy Sauce (kecap) (a common term for all fermented sauces), is divied into two varieties;

Kecap asin is a salty tasting soy sauce, that is very similar to Chinese light soy sauce. It is usually somewhat thicker and its flavour is often stronger. If needed, it can be replaced by light Chinese soy sauce in recipes.

Kecap manis is a sweet tasting soy sauce, due to generous addition of palm sugar. It is thick and it has an almost syrupy consistency and a treacle like flavour. Kecap manis is a unique variety of soy sauce. If you dont have any for your recipe, it may be replaced by molasses with a little vegetable stock stirred in.
