Korean Soy Sauce

Korean Soy Sauce (Joseon ganjang) a by product of doenjang (bean paste). Compaed to other 'soy sauces' Joseon ganjang is thin and dark brown in color and it tastes very salty. Its use is limited to some traditional dishes as cheaper factory-made Japanese style soy sauce, called waeganjang is now more popular. Waeganjang was introduced during the Japanese occupation of Korea.

Doenjang is rich in flavonoids and beneficial vitamins, minerals, and hormones which are sometimes claimed to possess anti-carcinogenic properties.
